My friends and I are going camping in Summer- has anyone got any nice, healthy vegetarian recipes that can be cooked over the fire? Also, how do you cook things over an open fire? Thanks.

Assuming your going camping, and not backpacking, you can cook in the coals as well as over an open fire.

This is most practical when you will have someone at the campsite all the time, or if the campsite has cement fire pits, but you can "sleep" the fire instead of putting it all the way out by covering the coals with ashes. You can slow cook potatoes or corn in coals (wet them, wrap them in aluminum foil, and burry in the coals). You can also burry certain dutch ovens in hot coals for making cobblers and such. I've seen cast iron cauldrons (small ones) that can be placed in hot coals and/or small fires for making stews.

Over an open fire there are basically three types of cooking that I'm aware of - skillet, grill, and skewer. Skillet cooking either requires a very strong arm and long handle, or, more likely a grill. :) You need heavy duty pots and pans for outdoor cooking - cast iron is what I usually see. Set up your grill, and put your skillet over it. You could also boil water this way for cooking, but I usually see people using camping stoves for this. Grilling works just like barbecuing. Skewering is putting your food on the big sticks - like with marshmallows.

one thing i know you can cook over a fire is corn on the cob (leave the husks on) you get this wire rack thing (it kinda looks like a cooling rack) and you put that over your fire. you could probably go to any camping/sporting goods store also, if you dont hear anything else to cook over a fire, i brought a really small stove last time i went camping..it runs on gas so all you need is matches..hope this helps *KaysEe

There are a wide variety of vegetarians, which one are you? Pesco, vegan...etc? I'm going to assume you're an all veggie person so here's my advice :)

A yummy and simple veggie recipe you can do on an open fire is roasting vegetables. What you do is you chop the vegetables in big chunks (or roast whole) and drizzle extra virgin olive oil to coat them and add some desired herbs (thyme, rosemary, etc.; personal preference) and salt and pepper. You can also add lemon juice and garlic. Then you get l-o-n-g kabob sticks and "thread" the vegetables through. Roast on an open fire and remove when tender and lightly scorched. Be sure if you use wooden kabob sticks that you soak them in water before you use them!

Also you can make quick and easy baked potatoes. Just wrap potatoes in aluminum foil and place in a light fire (or grill preferably) until fork tender. Add desired toppings like sour cream, butter, bacon bits, chives, be creative!

Another recipe is roasting corn. You could either use kabob sticks (preferably metal) or do the same with the baked potato and wrap it in foil. But season it first and then wrap it in foil. My favorite corn seasonings is pepper, herb butter, topped with parmesan cheese.

You can also cook vegetable soup/stew. You would need a pot and a type of stand for your pot to stand over the fire. As for recipes, you can just use canned soup, my favorite being Progresso.

I hope this helps and have fun!

For your veggie delight, you could try taking a cucumber, carrot or something like that, and roasting it over the fire. Then place it in a bun. It's actually good, because I've done it before. For cooking over a fire, I'm not really sure.~Kendall~

Well to start out, cooking things over an open fire is quite simple. At any camping supply store, they sell these metal rods that you pretty much shove through the food you're going to cook and hold it over the fire until it's cooked completely. This isn't a vegitarian recipe but it's really tastey: Take apples (any kind you'd like) and stick it on one of those metal rods, hold it over the fire until it starts to brown a little, let it cool and eat it! They're sooooo good. I used to eat those all the time when I went camping. You can pretty much do that with any fruit and it tastes really good! I'm not a vegetarian, so I'm really sorry I couldn't give any recipies.

Bisquick on a stick! Mix Bisquick and make a dough, then mold over a clean stick. Cook until golden brown. It makes a tastey roll!
