okay i LOVE to cook. whenever i make this dish... it's chicken in a lemon sauce with garlic pasta.. my chicken never comes out tender. but when i make all of my other dishes, like chicken parm. chicken marsala, chicken stir fry and everything else, they always come out tender! how can i get my chicken to be tender?

Hello. My father is a butcher, so im a huge meat fanatic. You can cook the chicken before you add the lemon-garlic, but then you get less citrus flavor in the chicken because it was pre-cooked and its fats couldnt collect the juices and soak up as much... When it's pre-cooked it also dries out faster. A good tip is to soak the chicken in vinegar the night before you prepare. Once you take the meat out, the vinegar will be soaked in but once cooked, the vinegar will act as a base for whatever you cook the chicken in, and the meat will stay tender as it soaks the citrus and gets the full flavor. Plus, the citrus won't dry out the chicken because the vinegar will keep the chicken tenderized but lemon and garlic flavor will still enter the meat. Thank you for your time. Good cooking!

citris juices, like lemon and lime, totally dry out white meat. are you marinading it in the lemon sauce? Try adding anything with lemon in it as late as possible in the recipe and it should be better.

okay well you can use a meat tenderizer or a sterdy cup and wack the shit out of it lol! and also try marinating it in the lemon juice with a little bit of vinegar. trust me you wont taste the vinegar, it gives off the same taste the lemon does when its mixed with lemon. vinegar is really good for tenderizing all types of meats. good luck!

this might happen cause your chicken might need to be cooked a bit before you do the pasta stuff and everythig i love too cook to and everything but you might want ot try cooking a bit before you do everything that might help
