I need some advice on frying. When I try to fry whatever food, it comes out greasy and not crispy. Either it is overdone, or it is underdone. It doesn't matter if it is a chicken, homemade french fries, potatoes, you name it I screw it up somehow. I have been trying for a long time, I just can't seem to figure out how to get it right. I use Olive Oil, Canola Oil, any regular frying oil. I try to keep the oil and about 350 degrees and I don't add too much food to the oil to lower the temp drastically. I do not know if it my technique or if it is the oil I am using. Any advice or tips would help greatly.

But if you're deep frying something in one of those big deep fryer pots, use peanut oil, its a little more expensive but it gets the job done
AND DONT FORGET: before deep frying ANYTHING, put it in the fryer by itself (unheated of course) and fill it with enough water to cover whatever your culinary creation may be haha this will show you how much oil you need, because it is important to not have too much or too little oil.
Don't cover the skillet if you're cooking on the stove, because it locks the moisture in and makes it soggy
If you're breading it, use vegetable shortening or lard (dont use lard if ur watching your cholesterol haha)
For potatoes, your oil must be EXTREMELY hot before frying them
If all else fails, it could be as simple as too much grease

The thing that saved my chicken etc. was a cast iron skillet. Works great!
As far as it being greasy. It may be that you are cooking it to hot. I don't know the exact temp to use if it is an electric skillet you are using but on electric stove set it on medium temperature.
Another tip...Don't use a lid. Keeps the moisture in there, which you don't want for chicken or fries.
Another thing is I have found vegetable shortening to work best for frying (actually lard is best but ...yikes cholesterol).
If you are wanting to deep fat fry things like fries. You want the oil to get VERY hot before you even put the fries in. Putting them in to soon results in the first batch being pretty soggy. Make sure you use enough oil to cover in that case too.
In both instances a little drip of water off your finger into the skillet will tell you if it is hot enough to add food to it. If it sizzles its ready. Be Very careful not to put a bunch of water in it...it will jump out and burn you.

Try putting the food on a paper towel after you take it off the pan. The food isn't going to stay crispy forever, try not to let it sit for very long before you eat it. If you already do all of that or it's still not working, try using a brand new frying pan. When pans get worn out they tend not to work as well.
