searching for classy cheese I want to have a party and I want to serve cheese, but I don't think plain old cheddar is very classy or interesting. What are some other good cheeses I can serve just cut up as cubes, that people might not have tried before but will still like?

Brie is excellent for just this sort of thing. Plus, it's very tasty. I also reccomend asking your local delicatessan worker at the grocery store. They should be able to help you find some good cheeses. ]
Havarti is a nice mellow cheese that cuts nicely. A little chewier and less sharp than cheddar, and with tiny holes in it.
Stilton is definitely in the moldy, exciting cheese category but is really good with graham crackers or fruit. It's probably going to be hard to get into cubes without crumbling.
Brie is a great party cheese, mellow on the inside with a slightly sharp-tasting crust, but is usually served in one wedge, off of which people hack bits and spread them on their fresh-baked baguettes.
Aged cheddar (3 year is great) is barely recognizable compared to regular old cheddar and is a favourite of mine. Except for the really old stuff, it cubes well too. ]
Well brie is really good, but its soft. Its good on crackers though. Plenty of people like chedder! Get smoked mozzerela or just plain mozzerela. My freinds really like cave cheese (it sits in a cave). Or you can just get a can or two of easy cheese. Its actully really good! ]
Sharp cheddar isn't boring at all... and it goes REALLY well in veggie wraps with salad dressing. Honest.
I am personally a fan of St. Andre, but I don't know if that's the kind of cheese, or the company it's from. But it's squishy! I'm a lot of help, I know. ]
i would go for a hard cheese, as i find soft gooey cheses turn people off. a lot of people prefer sharp cheeses to the milder ones, but don't have stinky cheese 'cause people don't want smelly breath lol. also, i wouldn't advise blue cheese, because most people will not like the idea of trying mouldy-looking cheese. smoked cheese is yummy (try and get the dutch stuff)... hope that gives you some ideas! ]
I would suggest going to a local cheese shop, gourmet grocery, or at least a very good grocery store. A good cheese shop will have samples of a variety of cheeses that you can taste and check for desired appearance.
If you're just going to grab something from the local grocery store's dairy case though I would probably suggest against it. Since you seem interested in presenting the cheese on it's own and not in combination with other ingredients you really aren't likely to find much that would work well. ]

Pepperjack is really good on triscits and wheat thins, if you are serving crackers with the cheese. Colby, smoked cheddar, swiss, the possibilities are endless. You might also want to pick up some grapes to serve with the cheese to class it up a bit. Grapes and cheese go really well together. ]
Colby & Monary Jack Cheese, It's real cool looking, yellow and white cheese all molted together, its like marble cheese, and its good too! ]
Bleu, White American, pineapple...
Really any kind of cheese will do. Try going to your local grocery store and just asking the man/woman by the cheeses which would be good. Also you could visit www.cheese.org ]
