Be sincere, but don't fluff it up too much. You can say "I couldn't have done it without you" if you truly mean that.

There are websites that help you write thank you notes and proper ettiquette that are helpful.
I gave my teachers giftcards to a restaurant because I knew them both pretty well and they both spent many hours outside of school helping me. You could include a small gift like a book/bookstore giftcard, a holiday gift item like a cute mug filled with hot cocoa mix, etc.
