vegetarian recipies!

i'm semi-new to being vegetarian, like i've been on & off for forever now, but i only stop, because i get sick of the same old thing. i need help thinking of really simple recipies i can make myself. like i found vegetable burittos, that were very easy, and i want other vegetarian/vegan snacks/recipies that are simple & quick to make. i'm the only vegetarian in my house, so yeah. & i like vegetables, and all that, and i'm open to about anything. :)

get or rent the skinny bitch in the kitch cookbook. it is a vegetarian/vegan cookbook with a lot of recipes that allow you to eat chocolate cake and cookies n everything with substitutions.

Well this isn't really simple but it's not hard either and it's really good and it's a really great receipe. Curry Boulanger (Curry Eggplant) Ok So you are going to need:
about a teaspoon of diced garlic
Some curry powder...Taste it to see if it's seasoned (if it's not seasoned then you will have to add salt and peper and what ever other nice spices you like, nothing too hot unless you like it really spicy cause the curry should already be pretty hot).
You will need an Eggplant cut into chunks maybe like 1x1 inch chunks.
An Onion (small to med) diced.
maybe like 2-3 tbs of cooking oil (just enough to get the bottom of the pan fully covered)
and you want to get either some roti from the indian store or you can use tortilla but you will have to either fry the tortilla or put it in the oven on broil just enough for it to get warm and get a few bubbles (turn it around a couple of times to warm both sides).

Ok So here is what you do. You heat up the oil, I like to cook on medium high. Heat up the oil and when it is hot (like you were going to make some eggs or something) then put the garlic in and fry the garlic until it's like golden brown. Then you want to put in a bout a pot spoon of curry. Sprinkle it around. When it starts to become a gravy...then you want to take your diced eggpland and put it right in the pot and mix everything up so all of the eggplant is covered in curry. Then you can put in your onion and then you can put the heat on medium (cause it's pretty much just going to simmer at this point) and I like to cook it down really soft...but you don't have to...just cook it until the eggplant has a softer texture and it's done. If the gravy starts to get too thick just add a little water at a time...like literally no more than like a 1/4 of a cup at a time. Then when it's done to your liking...keep it on low, cover it and fry your tortilla or broil it in the oven...or fry your roti you got from the store or what ever the directions are...and then! You take that curry put it in a bowl and break the flat bread and use the flat bread to pick up the curry...you eat it with your hands :) or if you don't want to do bread or don't want to eat with your hands you can put this tasty vegi curry over rice! It's sooo good and it's one of the only ways I like Eggplant. You can get curry at most big grocery stores if you live in a pretty diverse community and especially if you live in an area with a large east indian/west indian/caribian community.
You can also get it at places like Papa Joe's or The International market or even Whole Foods I think. :) Bon Appetit!_______________________ Hey I had another great thing I tried and I thought you might like it. YOu can use soy meat...I recommend the Smart Start one in the "Jimmy Dean like package" These are really good. Take that and fry that up, and then make some Mac and Cheese...just the package, and then add a little cheese in the pot, and then put some Mozzarella on the top to cover the whole thing and the let it broil in the oven until the cheese is brown and crispy.
