One that we used might appeal particularly to your mom, as she's likely close to my age. It's "Grow Old With Me" by John Lennon. I heard it on a Mary Chapin Carpenter CD, but it's been covered by many artists. Also, the man at the music store I ordered the sheet music from told me that two arrangements are available: one for a more "alto" voice, and the other more soprano.
Some lyrics:
Grow old along with me, the best is yet to be
When our time has come, we will be as one
God bless our love, God bless our love.
We also used "One Hand, One Heart" from West Side Story (it gets into a high range), and the traditional Bridal Chorus and Mendelssohn's recessional (because when I got married, I didn't do anything traditional!)
My advice is to choose something meaningful, but also not too difficult to sing, so that you can enjoy yourself instead of worrying. Good luck!

I'm just curious because if you have the talent to sing and can actually write and arrange something you wrote yourself. That would have more of an impact than anything we could ever recommend that is already written.
