can you only use soft bananas for banana bread? also, is there a way to make it without a boxed banana bread mix? approximately how many bananas do you need to make one? thank you :)

1 egg slightly beaten
1 cup of sugar
1/4 cup (or 1/2 stick) melted butter
*2 cups(3-4)of RIPE MASHED bananas
1 1/2 cups of flour
1 teaspoon of baking soda
1 teaspoon of salt
**1 cup of chopped nuts (optional)
Mix ingredients in order listen. Bake in a greased bread pan for 20 to 25 minutes ((make sure itz ready at 25 minutes cuz it may not be)) at 350 degrees.
*make sure the bananas are like REALLY squishy and brown. they get ripe faster when you put them in the fridge. i know it looks really gross, but it makes THE BEST banana bread
**my opinion is nuts ruin the banana bread and you can take the bread better without them. but if you like nuts..then thats you choice.
Moop answered Friday August 25 2006, 6:24 pm: traditionally, bananas are used as egg substitutes in vegan baking. it's about 1/2 of a banana to each egg for an intense flavor and 1/4 or 1/3 for a lower flavor. so basically you could just take a regular bread recipe and switch out the eggs with bananas. try googling for banana bread recipes. also, it's possible to make cookies and muffins and everything taste exactly like banana bread by switching out the eggs for bananas.
