I think it would depend on the recipe. Is the ground beef supposed to be combined with something in the recipe? Or is it supposed to be in whole patties?

If it's whole patties, I don't see why you couldn't use fillets instead. You may have to keep an eye on the grilling time, as it may be different with the fillets, depending on thickness.

If the ground beef is mixed with something and is supposed to hold it's shape with other ingredients (like meatloaf), and then grilled, I don't think fillet pieces would work, as it wouldn't be able to hold together.

If it's a loose mixture (like stir-fry type of mixture) then I think sliced fillets would work just fine. Again, adjusting the cooking time accordingly.

So, as I mentioned, it depends on the recipe. ;-)
