"Cherry" is the more common [slang] word for 'Hymen'. A "cherry pops" when the Hymen becomes intact, or rips, basically. This can happen several ways: sexual intercourse, masturbation, inserting tampons, extreme sports and so on. It doesn't really MEAN anything.
