Well, I like to give small animals long names, the smaller the animal, the longer the name. So I would name a tan male gerbil Zebulon Russett Longbottom Rodentberger III.

My favorite would have to be Jolly Roger. *nods head* All the names you listed were "cute" names; this is a gerbil we're talking about! He deserves something masculine and tough. Jolly Roger. Very good. Or Cow. Just because it's random.
I also like what Shake said. "InsaneCrazyPoptart" or "MountainOyster" but I like "InsaneCrazyPoptart" better. Or you could just call him Poptart.

AWWW!! I have gerbil just like that.... I think Cinnamon is the best name in that list. Nibbles sounds a bit too girly for a male.
