Hey, an awesome substitute to ice cream is sorbet. There is chocolate, raspberry, strawberry etc sorbet, and it is completely lactose-free. To make a chocolate milkshake, you can use soy milk and mix it with chocolate sorbet in a blender. Or, you can make a raspberry milkshake with raspberry sorbet and regular soymilk. Each is very tasty. Lactaid milk brand hasn't started making chocolate milk, but I have a feeling they may start soon because a lot of people have this intolerance. As mentioned before, chocolate soymilk is good.
You shouldn't have to deal with the nasty side-effects so help yourself out by avoiding the foods you know that hurt your intestines.
