Well.. I'm not any of those cultures, but I am vegetarian. And if you want to go out to eat there is a lot of places that have vegetarian menus. You can go on vrg.com or PETA.com. Last time I looked they still showed all the restaurants. And they have recipies too. I just went to borders the other day and got some cookbooks who gave lots of cultural recipies. Also , what I do is for foods I used to like that contain meat or eggs(I'm pretty much a began, but I slip sometimes) I just use morning star or tofu. You could try that too. Hope I helped:) ]
Both China and Japan have long Buddhist traditions, so they have a huge repertoire of vegetarian dishes. Most Chinese restaurants will have a vegetarian section of the menu: a pretty common dish is Buddhist's Delight, which is mixed vegetables with tofu. Also look for something called si xi kaufu, which is wheat gluten braised with soy sauce and vegetables.
Japanese restaurants are similar in catering to vegetarian diners: if you're getting sushi, look for tamago (egg), inari (fried tofu) and kappamaki (cucumber-ginger rolls).
Mexican is a bit more difficult: a good veggie option is chiles rellenos. It's a roasted poblano pepper stuffed with melted cheese. Very good. Quesadillas with vegetables are always an option; if you're going to hardcore authentic places, you might be able to get squash-blossom quesadillas. If you can get your boyfriend to try it, get quesadilla de huitlacoche (a blue fungus that grows on corn; tastes a lot like strong black tea)
Italian dishes give you some leeway: most places have cream-based sauces that will make your arteries slam shut. As vegetarianism becomes more prevalent, a lot of places are offering veggie-only dishes, or at least eggplant parmigiana. Also look for pasta e fagioli, which is a thick stew of beans, pasta and vegetables.
If you want a serious vegetarian meal, go for Indian or Ethiopian. Both countries have a huge repertoire of vegetarian dishes, and you get to eat with your fingers! ]
There are tons of vegetarian options in all of those foods!
Chinese: Tons of vegetable dishes; bean sprouts, eggplant, peppers, wonton soup.
Japanese: Vegetarian sushi (avocado, cucumber, sweet potato), tempura battered veggies, edamame (soybeans)
Mexican: Quesadillas, tostadas. Guacamole is really tasty and super healthy too!
Italian: There are tons of dishes. Lots of pasta dishes can be made without meat. Pasta puttanesca is one of my favourites! ]
