Even if you're doing "nothin much" at the moment, there's probably something going on in your life that you can talk about. Then they can comment on it, and the conversation can go from there. Here are some examples:
them: whats up?
you: nothin much... just got back from soccer.
them: oh cool, how was it?
them: whats up?
you: nothin... im just really mad at my sister.
them: oh, what happened?
them: whats up?
you: nothin really... just waiting for my favorite show to come on.
them: oh cool, what is it?
them: whats up?
you: nothin much.. just wondering what to wear for the dance
them: oh cool, im wearing a black dress

Tell them what's actually going on in your life.
I mean, I feel so stupid saying nothing sometimes when obviously, something is going on. I'm not THAT boring. So, yeah, tell the person what you're doing.
