Try adding rice, beans, lentils, cous cous etc., to your diet. You can't only eat vegetables, so you can mix veggies with a main staple, like rice, for instance. If you'd like, you can make a simple stirfry with your favorite veggies...anything, really..pea pods, mushrooms, carrots..., and add a bit of sauce (soy sauce, teriyaki..of course, make sure it has not animal by-products), and you can have that with steamed rice. Or, try having cous cous...it's so delicious, and simple to make. You can mix it with just about any seasonings/veggies you like. Try also having vegetable soups. Umm...let's see- really, if you use your imagination, you can think of anything. OH, and you mentioned that you don't like soy milk...you could try Almond milk instead. If you want a quick snack, some veggies with hummus dip, or some other non-dairy dip is great, or even pita chips with hummus..mmm! Now I'm getting hungry, lol. What's great is that vegetarian and vegan meals are becoming more mainstream now, so you can find tons of recipes online. There are even vegan cookbooks out there too. Bon Appetit!
