Those cheese have mold in them. Look closely you will see it, and I find it quite tasty. although I hated it when I was young.
NOt all cheese have mold on them. If you have say American cheese in the refigerator or Romano, or Muenster, or Cheddar, and it has green mold on it don't eat it. It is not good and won't taste good. Although it won't kill you.
There are some other cheeses that have mold on them on purpose, but the only ones I can think of are blue cheese and gorgonzola.
