why does it freak a guy out when a girl that they've had a secret crush on finally starts to show an interest back and flirts with them, especially if he has no problem flirting with the other ladies?

its probably just nervousness.
thats what happened to me when my crush started to flirt with me. She was like all touchy and i was just like ohhhhhhhhhhhhhhhh. I was just nervous to be around her because i thought i would be an idiot, but its just normal that some guys do. some guys are shy, some are active. it just depends.

It's most likely because he feels insecure about himself and he doesn't feel very confident. As in maybe he's still unsure that you actually like him. He probably also feels uneasy because he may not be ready for a relationship, and he's surprised that someone actually wants to have a relationship with him, so he's scared.
I would ask him if he wants to become friends. This way, he can learn more about you, and then maybe if all things work out and he sees the real you, he'll warm up to you and ask you out or so, "Yes" if you ask him out.

A lot of guys flirt with every girl they come in contact with. If they REALLY like a particular girl, they're worried about messing up around her. When she starts to show an interest, they can get overwhelmed.
Plus, for a "secret crush" it doesn't seem like much of secret to me. If everyone knows about it, that's another reason for him to freak out.
