now does it not say who your in a facebook relationship with anymore??

It didnt for a little while, and I was confused by it too, but its back and showing who you are in a relationship with.

BUT for it to show up you have to choose the person and they have to accept that you two are in a relationship together.

No, you can choose have it say who are not. The person has to put in the person's name. People can also choose to just have it say "In a Relationship" without having it say who it's with.
