You will notice that they use weighted crunches (with a weight behind the head)... that of course is only neccessary if they are too easy.
The general notion is that crunches target the abdominals more, while sit ups use the hip flexors to some degree. Also, sit ups put pressure on the lower back which can also make them less comfortable/safe to do.
Oh, one final note on the videos. Its important not to pull your head up when doing the crunch. In the video it looks a little like he is doing that, but in reality he is just holding the weight against his neck, not pushing against it. [ Alin75's advice column | Ask Alin75 A Question ]
