The reasoning behind this is the effect these foods have on your blood sugar. Before you workout you want to give your body a little bit of sugar to raise the blood sugar level and cause a better fat burning enviornment.
After a workout you will want to do the opposite, since everything in your body is going crazy already from working out you want to give it a quick shot of a slow digesting nutrient (protein) as the blood sugar stabilizes.
