Well for dinner I would recommend a good protein and a lower GI carb (Chicken and rice, beef and rice, etc.):

-Stick to extra lean cuts of beef
-Bake, broil, steam or grill if you can. Avoid frying as much as you can
-Include a raw salad in with a later meal and go easy on the dressing (Really if you blend cottage cheese with a flavored powder salad dressing, you have an excellent high protein low/or no fat salad dressing which is really good.)
-Include lots of water in with your meals. This transports nutrients where they need to go and transports toxins and byproducts out of you through urine.

substitute all meat with RAW nuts. let me emphisize raw. roasted and fried nuts are really bad for you. theyre full of bad fat. raw nuts are good for you, they have good fat that will make you lose weight. go on a raw fruit nuts, and veggies diet. all raw. i read in a magazine that demi moore is on that diet. good luck!

Veggie burgers, spinach casserole, etc. There are LOTS of things, actually! Get a vegetarian cookbook! There are a lot of them out there.

There's plenty of things your mom can make:

Homemade pizza
Egg, cheese, broccoli(or zucchini) quiche
Pasta/Sphagetti
Eggplant
Black Bean Burritos
Pita Quesidillas (veggies and cheese!)
Avocado Eggrolls
Lentil Soup
Veggie Burgers (can be good!)
Lettuce Wraps
Salad (all your regular toppings along with walnuts and apples-tastes good!)

I recommend buying a vegetarian recipe book or printing recipes offline. Good Luck!

you can make this yourself, its really easy, i invented the recipe myself!

You'll need: pasta
eggs
tomatos

1.Cook pasta.
2.Put an egg(or 2 or more, depends what you want)
into a mixing bowl.
3.Chop a tomato(or 2 etc) into little pieces.
4.Add tomato/s to the egg/s. Mix well.
5.Heat some oil in a frying pan and put the
pasta into it.
6.Add the egg+tomato to the pasta. Stir until all
the egg is cooked.
7.Enjoy!

I've been a vegetarian all my life and I'm perfectly healthy, but I really don't know how it is to go from eating meat to being a vegetarian because I've never eaten meat at all... I'd imagine its a pretty huge change.

Pasta is always a good thing, veggie noodles are great too, vegetable salads (with not much dressing if you're on a diet), subway sandwiches, etc etc. I'm Indian so I eat mostly Indian food. You could search google for a vegetarian recipe site.

Hardest thing about being a vegetarian is getting an adequate source of protein, so make sure you eat lots of beans, cheese, milk, nuts, and other protein enriched foods.

Heres a good site to go to: [Link](Mouse over link to see full location)

Good luck... being a vegetarian is really worth the trouble in the end.
