I haven't used their manual conversion system before. The reason is that I have had good conversions with both Abbyy FineReader, and Omnipage. These are both excellent OCR software and should do what you need.
I saw your other question that you had individual page scans, so I suggest OCR software first.
the only reason for manual conversion would be if your source documents are very hard to read or very low quality (bad printing for example) to start with.
If you decide to go with manual conversion, just make sure that they guarantee their work by offering you a money back guarantee if it goes badly. ]
you should just install adobe acrobat reader. its always there when you need to read PDF files and its malware/spyware free. ]
