i want to be a vet, but i don't want to be a legit doctor, kind of like a P.A. only for animals, whats this callledd? or is there such thing or anything like this?

It is called a veternarian technician, hopefully you can find a course at a local community college. There are some private colleges that teach this course, One in Colorado, but it is very expensive. So check out on line "courses for veternarian technician"
