There really isn't a reason for them to watch cameras. In stores like Target, or at least the one near me, security will occasionally look at the tapes for the cameras inside to make sure nobody is stealing anything, but the parking lot cameras are usually only to be used when there's a robbery, car wreck, or someone had something stolen from their car.
It's not like they're going to call the cops on you for public indecency or anything.
