First of all, you mentioned using the photography for the service project. If this is the idea, here are some suggestions.

1 - You can do the age old "calendar fundraiser". Take 12 (or more to choose the best from) photographs of similar things and make a calendar and sell them at church or a bazar or any other community activity. Ideas for themes could be nature, people, holidays, or simply something random that makes you think of that month.
-> maybe having a 365 day picture calendar like the ones with the daily quotes.

2 - Do something within the community, such as photographing different landmarks and events specific to your area and making a "discover __town name__" poster or simply getting someone who's technologically inclined (if you're not) to help you set up some sort of slide show of the pictures for the town website (if one exists).

3 - Another good one would be to do something for the hospital residents during the holidays. Christmas is comming up soon so perhaps if each person got a card, they would feel better (for the moment anyways) and touched that someone cared enough to send/give them a card regardless of their friendship. This is somewhat lik your idea in the question but with a slight twist which gives you the opportunity to choose whatever you'd like to photograph (obviously something to do with the holidays but not religion specific).
