how do you draw the line between the 2? when writing an essay for language arts or just doing research essay

You mean what the major difference is? Well, summarizing might include paraphrasing, but you're not including every detail, just briefly stating the main points of whatever you're talking about. If you're paraphrasing, you're reiterating everything in different words.
