I cook all my vegetables in big pans with olive oil. does heating it take out nutrients, and is the olive oil just making it really fatty? (i use a lot of oil)thanks
Alin75 answered Thursday April 10 2008, 3:01 pm: I have tried to research this and I get some mixed results. Some articles claim that raw is better and some claim one should eat a mix of the two. Either way, it does not seem to be a good idea to eat only cooked.
I also agree with the columnist below, how you cook seems to matter (boiling is probably the worst). Using a lot of oil is also not good in the long run.
However, it seems that any amount of cooking will change the composition of the vegetables. Sometimes some nutrients will be destroyed, other times some will be easier to absorb. What I would do in your case is start to get into the habit of eating at least some fresh vegetables, and then ease up on the oil when you cook. That way you should be able to get the best of both worlds. [ Alin75's advice column | Ask Alin75 A Question ]

While you are getting the nutrients from the vegetables you are at the same time getting a lot of fat from the oil. So in actuality you are doing your body justice. Try steaming the vegetables with herbs or baking them in a recipe.
