do you get to pick and choose your teachers in the beginning, meaning as a freshman?

Usually no, the teachers are picked for you. However, if you have a serious discrepancy with the choice of teacher, you could take it up with the guidance counselor for a possible change.

In high school - no, you can't.

College, you may get a say in who you want, but it's not always going to happen.
