If you go to the gynocologist can she tell if you've had sex, or you've done something else?

No.
But she is someone you need to be honest with about sexual activity. Like said before me, she can't tell your parents due to privacy.

She can tell that your hymen is not intact but it isn't always from sex. The hymen can be broken due to many things. She can't tell your parents if you don't want her to due to Doctor-Patient Confidentiality.
