when you download your new itunes, plug in your ipod and once the settings comes up, make sure that MANUALLY MANAGE MUSIC is checked.
that way, you can download cds unto your library, then drag and drop your songs unto it.

As you plug in the iPod, hold the control and shift keys, this will prevent it from automatically updating. Hold them until the ipod shows up in iTunes, and a minute after.
