why do sunburns itch when healing

It's because your skin is peeling and flaking which easily makes an irritation on the surface of your skin.

Well your body itches most of the time to get off dead skin. So maybe your body is just trying to get off the burned skin. So it would be good to scratch it, but not to much. =] But its like all cuts and stuff they itch when they heal.
