if a word ends with an "s", & it's possessive, do you
put an apostrophe or not?

or
jess's house

I should think both are possible. Check out the info under "possessive apostrophe"

The correct way is to say "Jess's house", I believe. However, many people use "Jess' house" because it is much easier to say and write.
