As opposed to someone who is called two-dimensional, what’s a 3d person? And what is 2d and 1d or is there only 3d and 2d? (not computer graphics or videogames related)

In general, something that is:
1d is a line,
2d is a flat shape,
3d is something that has depth.

In the sense of people there are only 2d and 3d. Someone that is 2d is tacitun, reticent, and apathetic. Someone who is 3d is capricious, vivacious, and lively.

You're over-analyzing. In that context, there is only two-dimensional. No one says "you're three-dimensional", because that is assumed. 1d and 4+d aren't terms in the mainstream, so saying that would be meaningless.
