Well sweetie, what I would tell your mom is that you want to talk to her. Tell her that you don't eat a lot because you just have a little stomache. What you might want to do is not eat just when she makes you but when you feel hungary. So she knows you are eating, write down everything you eat in one day. When she sees that you do eat, She will back off and chill. She is just worried about you, I mean she has a right to be, You're her daughter and she cares a lot about you. I hope I helped, and if you need anything else, let me know.
XOXOXOXOXO

Well, I don't eat a lot either. I eat too much junk food and not enough good food like meats and vegetables. My mom bought me these really healthy protein drinks that are chocolate flavored and they're very yummy. It's called ensure. If you feel your mom thinks you don't eat enough, ask her if she wants to buy you some. Hope I helped.

try explaining to her that you love her and understand why shes doing this even if you dont.
If this doesnt work then try doing ither way for a little while and eventually shell forget all about the fat comment.
Sorry this isnt very good advice but your mum will feel that she is only doing whats right for her daughter
