I made this really good rice for a project for Portugal and it is delicious. Many people have tried it.

Veggie Rice
What you need is:
A box of rice
A microwave safe bowl
Garlic/Garlic Seasoning
Can of sweet corn
Tomatoes
Drainer
A mixing bowl of some kind
Sugar

1. Follow the directions of the box of rice.
2. Once it's done, take it out, take the drainer, and pour the rice in there.
3. Once all of the water is drained out, pour the rice into a mixing bowl and set it aside.
4. Take your garlic, and chop it if you have actual garlic, and toss it in there, if you have seasoning, lightly sprinkle it in the rice.
5. Take the tomatoes, and dice them, or if you have pre-diced tomatoes, then thats fine, toss them in there too.
6. Take the can of corn, and open it with a can opener.
7. Take a fork, and scoop some out into a microwave safe bowl [you can use the same one, just wash it].
8. Microwave for 3-4 minutes.
9. Drain the corn too.
10. After you drain it, pour some into the rice in the mixing bowl.
11. Mix it all together, and taste test it. If its too sour or something, add a pinch of sugar. Mix it again.

There you go. Sorry if there was any confusion. That was the best that I could do.

I went to college for Food Service Managment so I am an expert on this subject. You should know what your guy likes to eat to really impress him. But, I say an italian meal would be perfect. At the store pick up a jar of Alfredo sauce...I would typically make my own but you want quick so the jarred stuff is good. Also buy some kind of pasta...i would say Fettuccine noodle. Make sure you have olive oil. And of course grated Parmesan cheese is a must for an italian meal. Also if you want a great dessert go to the freezer ailse and introduce yourself to Sara Lee(best choice) or similar brands frozen desserts require nothing but thawing. Now follow the instruction on the package of noodle for cooking time typically it should be between 7-10 minutes. It's important to not over or under cook the noodles. Then once you got the pasta in the boiling water which by the way before you boil water put in a a tsp of olive oil and a 1/4 tsp of salt. Prevents noodles from sticking to much. Throw the alfredo sauce into a pan on a real low heat and make sure to stir it because it can burn fast. Do this after the noodles are in the boiling water because it won't take long to heat the sauce. Once you have the noodles cooked and sauce heated toss it together and be careful not to add too much sauce though put the reeat in a dish on the side you add more at the table. Top with the grated parmesan cheese. Also use the idea of the salad and dressing. Because salads are a snap to throw together. Trust me he'll love it. The only thing is you might need to add salt and pepper once your eating for extra flavor. Good luck. :-)
