Ice Cream Science Project Hi, I'm a junior in high school. I'm doing my science project on the making of ice cream with liquid nitrogen. Liquid nitrogen for those of you who don't know, can be used to freeze things almost instantly. Anyways, I've done research on both ice cream making and liquid nitrogen, but I have a problem. I need to write about how chemistry is involved with this whole process. Any ideas or suggestions? I'm looking for a lead on how exactly chemistry is involved with this experiment, nothing too general please. Thanks, will rate.

well its involved because your useing liquid nitrogen to freeze somthing, in your case icecream, and it is frezing somthing faster than it normaly will (when you have it in the freezer)and it is also because the fact that somthing is freezing using somthing other than cold air.
