I'm having trouble finding the answer to this problem. Maybe I don't ask it right, see if any of you can help me out.

I am thinking of buying a new camera. I currently have a pentax which I love but it has seen better days.

I'd like to try a digital one but here's the thing no one has yet been able to answer for me.
I do not like the point and shoot, auto focus stuff. I want a set your own f-stop, focus.... manual type camera. I like my pic's to be my own creations know what I mean? Does anyone know if they make something like that in digital cameras?

I think the problem lies in the fact that I don't really know what the official name for the kind of camera I'm wanting is. I'm in process of packing for a move and all my stuff is currently unavailable to me.So, if anyone knows at least that much it would be a help in my search.

My dad is a professional photographer and he uses a Fuji Finepix(S2 or S3 pro) 12 megapixel. http://www.fujifilm.com It has auto everything but you can also swap it to manual, so you can do pretty much anything you want with it. The auto-focus usually just depends on the lens you are using.
You never mentioned price, so I'm assuming that isn't much of a problem.
