Well, two weeks ago after the last time we met, I thought the same as you said, about her seeing me as an employee and someone to talk to at work. But then, this Sunday she messaged "Hello there! my name is *her name*...do you remember? If you do contact me thanks", which as you can tell absolutely changed my mind...So I called her the next day, we've talked like we did before, so now I'm feeling more free to just call her for no reason because now I know she does care for us to stay in touch...I DO have other options right now in terms of relationships, and I don't know what is REALLY up with her, but I will keep in touch with her for sure...
What do you think? :)

I think thats the best idea you have had since I've first talked to you.
That is very very smart of you. Keeping contact with her, but also leaving your options open. That'll way if she does want a relationship with you, you can always be with her; you can just play the field, progress your relationship with her, and do what makes you happy.
Make sure your not the only one keeping contact either, ya know? Make sure its an equal amount of calls made between the two of you.
Don't be the ONLY person trying to make this friendship work. It takes two.
I'd definetly try calling her very soon; maybe on Christmas? Wish her happy Holidays; and maybe ask her if she'd like to go to lunch, so ya'll can really catch up!
Just take it step by step.
