I have a three year old lab and she will eat literally anything. Hair ties, pencils, paper... She has also destroyed (completely crunched up) pens, plastic tape dispensers, etc and will shred any type of paper. The problem is she only does this when I am not home. When I'm home she does not touch anything that is not hers but when I leave her she always finds something. She's even gone to the point of stealing things out of open backpack pockets during the night. How do I stop this before she hurts herself or needs vet attention? Thank you!

This explains why she does it when you are not in, but is fine when you are home. Can you get another dog, a friend to keep her occupied? If not you need to make sure you exercise her regularly and give her a lot of stimulation. You might want to get a lot of chewy toys from the vet or ask your butchers for a bags of hoofs/big bones for her to chew on, so at least when she does it she doesn't hurt herself or swallow anything that will upset her stomach.
