Yesterday, my husband opened a package of those Keebler "Bug Bites". They are bug shaped graham crackers pretty much... Anyway, he ate one and it was stale and tasted horrible. It turned out they had expired in August of 2008... Today, he has been throwing up and has the runs. Is there a possibility that he got sick from eating even one of those crackers or is it just the flu and he needs to suck it up?

Having been there and done that, I also suggest having him to the doctor for a talk about food poisoning.
Bring the graham crackers with you. Not all food borne illness is the same. If it is something that isn't likely to pass with a course of antibiotics, then they will want to send the suspect food out to see what, exactly caused the problem.
I wouldn't wait. I would take him to the doctor.
Telling someone to "suck it up" where food poisoning is involved can sometimes be fatal. :-(
I ended up unconscious in the ER with my organs shutting down because I tried to tough it out once. And that was only 16 hours after ingesting what harmed me.
