Your average avocado in a grocery store costs about 1$ (at least where I live it does). Add to that tomato, garlic, fresh herbs, jalapenos, chiles and maybe some other ingredients if the restaurant gets fancy with it, and the cost is up there for a relatively small amount of guacamole. It also has to refrigerate for an hour after making it, so it takes a disproportionately large amount of time to make it, versus something like salsa that you can make ahead of time in big jars and use as you need it.
