I Love You My boyfriend (20), and I (18) have been dating for almost two years. Over the few months, I've noticed that he doesn't say "I love you" anymore. He used to say it just randomly sometimes and always say it back when I said it to him. So it's just really weird that now when I say it to him, he'll just either ignore it, change the subject, or just crack a joke. So I'm just like, wtf. What do y'all think is going on?

This is a problem where you should talk to your boyfriend. No matter what we say about this problem, you won't actually know until you ask him how he's feeling.
I don't know that he just fell out of love, but that's always a possibility.
Or he could be questioning himself. Maybe he really likes you and is afraid of being so close with someone, so he's trying to put some space in your relationship... Has he ever been hurt in a serious relationship before?
Either way, you should talk to him. Ask him if there's something wrong... ]
Considering your age, could it be possible that he's more busy than usual? Stress can make you behave differently but this is just a slight possibility.
Personally, I think you should talk to him and make some observations: does he act differently? Does he spend less time with you? Does he not answer/call you back? If the answer is no, then it's just a normal problem.
But seriously, if you're really concerned, then talk to him. If it's that important to you, then you should bring it to his attention. And one more note, if he tries to to divert the subject, then try and find out why. Be understanding and patient, that's the key to get past this small hiccup.
I hope this helped,
