I don't know much about Texas, but I did some suprisingly easy research through google, and one of the first results was about a Camp Olympia on Lake Livingston in Trinity. You get to choose from thirty-five or so activities, and basically do whatever you're interested in. It looks like a pretty chill place to spend a week or two. Check it out.
As to all girls or co-ed, I believe that you could have fun either way, but if you aren't very experienced with boys, co-ed might be the better way to go so that you can begin to gain experience with them. I know that when I went to my first residential co-ed camp, I learned a lot about working with guys, and realizing that they aren't all nose-picking aliens helped me once I went back to school.
I hope that my advice helps.

it doesn't matter if it is all girls or coed. but if you think you will feel more comfortable with a all girls camp then consider it. it would be cool because there will be more girl type activities. just look into options and then it will be easier to choose.
