Thanks very much for helping me! Unfortunately, I need some more help.

I heard higher ISO film like 400 over 125 is better for low light situations or indoors and 125 is better for outdoors and bright light. I first used a roll of 125 film and my photographs developed beautifully in bright sun. I used 2 rolls of 400 ISO film and my photographs
using Tri-X came out badly in overcast. Maybe I did something wrong the second time like put in the film weirdly or developed weirdly. I don't know if I can have that time to develop because our one darkroom is pretty overcrowded and I don't know how to keep track of what I did special for each take. Like..
"To write words in the air with a lighter/flashlight, set you aperture to all the way open. I haven't done this in awhile, so double check this part, but I think you click the shutter and then once you're done click it again.
Experiment with it."
I dunno if I can experiment because how do I keep track of what I did for which shot because there will be so many and we have a deadline for these. ahh! So to write words on it I click on the shutter full-way or half-way and then click again? Because if I click it once won't I have taken the picture and the second click taken another pic?
Also, my photography teacher wants us not to use automatic but manual instead. I guess my teacher will never find out lol but I thought automatic isn't that good and it's better to set the settings yourself. It's been too long and I'm too embarassed to ask the teach about these basics that I'm supposed to know about already and no one else in my class can really help me either.
It's just.. There are so many numbers for shutter speed and aperture that I don't know what to choose! :C
