Advicenators discussion: 8/14/07: sloppy joes with vegetables Moop wrote Tuesday August 14 2007, 10:54 pm: 2 cups lentils (red or white or yellow or green, whichever you prefer or can find)
1 14.5 oz can of tomato sauce
2 cloves of garlic, minced*
1 small yellow onion
teaspoon of cayenne pepper
one bay leaf
basil to your liking
1 teaspoon salt
whatever vegetables you have around; I like to use a cup or so of chopped fresh spinach and a carrot or two chopped into lentil-sized pieces
1 cup water
*a tip for working with garlic:
separate a clove from the bunch and set your knife on top of it. press down with the ball of your hand until the clove breaks. this quickly removes the skin and makes it easier to cut the garlic into little bitty pieces.
mix everything together in a pot over the stove or a crock pot. simmer until the lentils are soft, but not mushy, and enjoy over sourdough bread or on buns or however you like to roll.
