Atkins Plateau from not eating enough carbs

Ok I want to start off by saying that I am only interested in hearing from people who have done atkins. I am doing it in a very healthy way. So not lectures please. Thank you

Ok I was getting enough carbs in for like the first week or so, maybe after like 3 days I started losing about 2 lbs every 2 days. Which is great. Thing is I'm on a weird schedule wtih my love and so sometimes I am tired and I have to go to sleep and I don't get to eat all the 3 or 4 meals and for like 3 days I was only able to get 15 carbs in. That is when I started to platuea. I am back on a pretty regular schedule and it has been about 3 days now and I am still like rocking between 2 or 3 lbs on the scale. My pants feel looser though so I am wondering if I am losing inches. I am just wondering how long before this plateau generally breaks. Do you have any ideas on what I could do...Here are some things I have been eating:

Chicken legs, thighs and breasts: boiled baked or lightly fried with out batter

Soy Sauce

I cant believe it's not butter

veg oil

Spinich, cucumbers, red and green pepers (red i just started), lettuce (not ice berg), peas, cellary, broccoli.

Creame cheese (by craft which I was eating during the period I was losing with only 2 carbs per serving) colby jack cheese and cheader cheese

Eggs, sliced turkey (boars head and birch berry no honey added or anything) from the deli, fish

tea with no caffine (i checked) and a detox tea (which was fine during the first week) and that is about it. I would say about 2 liters of water or more a day along with the tea.

For exercise I have been going on walks, maybe for like a mile to 2 miles but I am willing to do some serious cardio too. Maybe like 30 min 3-4 times a day, is about what I could commit to.

I just want to add that I got an accurate scale today so I am not going to have to worry anymore about that...but I will still need that advice on plateauing (if that's a word haha).

I've been on different diets, including Atkins and, yes, you will plateau, no matter what diet you're on. You just have to stick with it and you will break through the plateau. There's nothing magical about Atkins. The reason you are losing weight is because you are cutting calories. Period. You could plateau for weeks, but if you stay faithful to the diet, you will break through. Your body is holding on to it's weight because it is now starting to burn with greater efficiency because it thinks it's starving. I lost 25 lbs. with Atkins and plateaued at around 15 lbs. I just kept doing the diet plan and eventually the rest came off. Exercise can help speed your metabolism, but you can't eat back all the calories you expend during exercise. Stay the course. You'll lose it!
