Figure out a few options for your meals (starting with simple things), and then you are ready to go. When I was a vegetarian I had a set of dishes (including some pasta varieties and a few salads) that I would make fairly regularly.
You also need to determine what kind of a vegetarian you are, depending on whether you eat dairy, eggs, and/ or fish (lacto/ ovo/ pesco vegetarianism, or a combination of the three).
What you have to pay attention to is that plant protein is incomplete. So if you do not intake fish, dairy or eggs, you have to vary your diet considerably to make sure you get all the essential amino acids. Decent vegan protein sources include soy, beans, lentils, oats, spinach, etc.
If you do not eat fish, you can get your essential fatty acids from nuts, seeds, good oils, and dark leafy vegetables. Fish oil/ omega 3 supplements can also be a good idea (in general, not just for vegetarians).
stackycasa answered Sunday March 29 2009, 11:46 pm: ive been a veghead for 4 years now and its pretty simple! as long as youre not going vegan you dont really need protein supplements or anything. just buy lots of fruits and veggies. my favorite thing for breakfast is a spinach tomato, mushroom and bell pepper omelet. for lunch i have organic peanut butter on whole wheat bread, for dinner sometimes a boca burger or pasta! Basically just eat lots of veggies and fruit and whole grains. its kinda hard for the first like 3 months but after that its really good! my whole family eats meat so i have to make my own meals but i've lost weight because of that! its really good for you, too!
good luck! [ stackycasa's advice column | Ask stackycasa A Question ]
