single cupcake i need a recipe for 1 cupcake, i cant keep
halving a 2 dozen recipe. and it has to be from
scratch, i know its alot to ask but i could
really use help. Thanks in advance.

Try this:
One Vanilla CupCake
5 1/3 teaspoons all-purpose flour
4 teaspoons sugar
1/4 teaspoon baking powder
1/16 teaspoon salt
1 1/3 teaspoons shortening
2 teaspoons half-and-half cream (or milk)
1/4 teaspoon vanilla
Set oven to 350 degrees F. In a bowl, mix together the flour with sugar, baking powder and salt until combined. Add in the shortening cream or milk, vanilla and eggs; beat on medium speed of an electric mixer scraping the bowl constantly until just blended (the batter will be thick, if desired you may add in a few more tablespoons cream or milk). Pour into one paper-lined regular size muffin tin filling under just three-quarters full. Bake until the cupcakes test done (ie stick a toothpick or knife into cupcake, if it comes out gooey then it's not done). Immediately remove from pans. Cool completely before frosting. ]
