Go to "My Computer" and look for your iPod, and look for a folder called "iPod_Control" inside. All your songs should be there. Copy them onto your computer and add them to your iTunes library. To be safe, disconnect the iPod first before opening iTunes.

I hate to tell you, but it is not possible to transfer them back. You have to start over clean. I would suggest getting all your songs back on your itunes, THEN updating your ipod. When you connect your Ipod, something should pop up that says something about updating the ipod with the library. Dont click this when its blank, because then you will have no music on your ipod either. It deletes every song in less than 2 seconds. So keep your ipod with your songs on it that way you can still use it while you are building your ipod back up. When you are satisfied with your itunes library, then click yes on the little popup, and everything will be fixed.
I suggest you burn all of your songs that you dont have on cds already that are on you itunes(or at least the ones that are important to you) onto blank cds as a backup, that way if it happens again, It will be easy to get your songs back.
Like I said, Im really sorry because the same exact thing happened to me more than once (I had over 300 songs also)
