Hello Bored in LA,
Mothers are very protective especially over daughters (and even more so if you are a first child????)
Have you asked her why she doesn't like him other than the fact he is opnionated? Explain to her that everyone has a right to their own opinion and it's better to voice that than sitting in the corner and not saying a word!
Being a mother she probably imagined you with a particular type of guy and she is probably saying this to you because she doesn't want to see you get hurt. What you have to do is explain to her that he makes you happy and why he makes you happy. Everyone has different tastes in men but the more she tells you she's not sure she likes him the more she will push you away.
You have a right to go out with whoever you want and for whatever reasons. She has to understand that. You say she said she's not sure he is right for you. Has she said why? And thinking about it - does she know him well like you do?
If she's only met him a couple of times she will only be judging him on first impressions which overall show nothing about somebody's real personality.
As long as you let her know these things she should start to understand.
Good luck!!
